    I am having trouble with the eggs curdling when I try to make flip as you demonstrate. How do you prevent that? Thanks.

      Hi Gerald,
      I think the key is to mix them thoroughly! The recipes often talk about poring the mixture back and forth between large pitchers a number of times to mix it up completely. I would also suggest whisking the eggs very hard before and after adding them to the mixture and before you put it the poker.
